HI I'm Holly and I am the owner of the Tea & Gift Shoppe.
I have owned and operated the Tea & Gift Shoppe, downtown Bemidji, since 2003.
Being we live in Northern MInnesota, and even though we believe all roads lead here, I wanted to make the Bemidji Tea & Gift Shoppe available to a wider audience. Therefore, have decided to close my brick and mortar shoppe and open an internet option.
Someone asked me once when did I became interested in tea. Well, there's a book out there called, "If Tea Cups Could Talk" by Emily Barnes. In reading this book, I loved the concept she spoke about of slowing down, relaxing and listening to God. I never once thought that The book was speaking to me personally.
The tea towel is a 17X32 all cotton, heavy duty towel, available in white and natural.
Designs are numerous and can be special ordered with a design or designs of the your choice.
They can be purchased singularly or in any amount you want.

Assam teas come from the Assam valley in northeast India along the
Brahamaputra River, are prized for their heartiness their malty flavor.

White Peony- White tea with more body than most and a sweet fresh

Oolongs are partially oxidized and possess some qualities of both
black and green teas. Known for their aromatic, fruity and sometimes sweet, bracing tastes. Caffeine content lies between black and green teas.
These are brewed slightly less than boiling for 2-4 min. Most oolongs are meant to be brewed multiple times. If there is curl left in the leaf there is still flavor in the cup.

TeaShoppe Chai Spice Mix
Prepare Chai in your own home with our blend of Indian and Asian spices for a more spicy authentic-tasting chai. Just mix with sweetened condensed milk & brewed Breakfast Assam. $2.75 per batch(1/2 oz.)
Black Tea - Boiling water (212°) and steep for 3-5 minutes.
Black Flavored Tea - Boiling water (212°) and steep for 2-4 minutes.
Puer - Boiling water (212°) and steep for 7-10 minutes or more.
Oolong - Water 190° - 200° and steep for 3-5 minutes. Try steeping for a second brew for 45 sec. only and add 15 sec each time you re-steep it. Many layers of flavors in these teas.
Green Tea - Water 175° and steep for 1-3 minutes.
White Tea - Water 165° and steep 2-3 minutes.
Herbal and Decaf - Boiling water (212°) and steep 4-6 minutes.
Bitterness some people associate with tea typically results from over-steeping. Over time you may adjust these directions to suit your own tastes. Preparing tea properly is not hard, but timing and temperature are crucial.
1. Boil (212°) a kettle of freshly drawn water.
2. Pour one inch of hot water into pot. Swirl to warm.
3. Pour out through spout or top.
4. Measure in the tea using one teaspoon per person (I find this a little strong, adjust to your own taste).
5. Add rapidly boiling water (212°) and steep for the time listed.
6. Strain to cups or pull out contained leaves.
7. Some leaves can be re-steeped.
(T-sac, strainer, tea ball).
8. Dispose of used leaves in garbage can or compost pile.
Relax and Enjoy!
1. Place 8-10 tsp.(1 oz.) of tea in a gallon jug, either loose or in a #4T-Sac.
2. Fill the jug with cold water.
3. Put in fridge and let steep at least 8 hours.
4. Strain or remove the T-Sac.
Serve over ice.
This requires less tea, black teas may turn out lighter. Makes a very smooth tea.
